I love eating vegetable soups or salads for my lunch. Salads can include any type of vegetable, and you can create a very hearty, healthy salad by using hearty greens such as kale. Adding warm mushrooms to the salad adds an addictive earthiness, but you could also include sliced, grilled chicken breast to the salad to turn it into a main course dinner option.

During fall and winter, we have access to many healthy varieties of greens, kale being a particular favorite of mine. Although I prefer using Tuscan (also called Lacinato) kale, any type would work in this salad. If you are new to eating raw kale, massaging it before using it in a raw salad softens it and makes it easier to eat.

I use a variety of mushrooms, including Cremini and Baby Bella mushrooms, but any type of mushroom works. Do not wash the mushrooms in water, which may cause them to get slimy. Instead, use a soft brush or damp cloth to clean the mushrooms and trim off any hard pieces of the stem.

  • 2 Tablespoon Olive Oil
  • 1 Medium Onion, Thinly Sliced
  • 1 Pound Mixed Mushrooms, Cleaned & Sliced
  • Salt & Pepper To Taste
  • 6 Cups Chopped Kale
  • 1/2 Cup Lightly Toasted Chopped Walnuts


  • 1/2 Cup Olive Oil
  • 1/3 Cup Sherry Vinegar
  • 2 Tablespoons Maple Syrup
  • 1 Large Clove Garlic
  • Salt & Pepper To Taste


  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced onions and cook, stirring frequently, until onions are deeply golden, about 15 minutes.
  3. Add in the mushrooms and cook another 10 minutes, stirring frequently.
  4. Season with salt and pepper.
  5. To make the dressing, whisk together the dressing ingredients until smooth, adjusting salt and pepper to taste.
  6. Toss (you may not need to use all the dressing) with the kale (massage if desired, or let sit in the dressing for a while), and warm onions and mushrooms.
  7. Top with walnuts and serve.
